A protein-rich, crunchy salad perfect for a light lunch.

Ingredients:

  • 1 cup canned chickpeas, rinsed and drained
  • 1 cup cucumber, diced
  • 1/4 red onion, finely chopped
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped
