Chicken Zucchini Soup
Low in carbs and full of lean protein, this light soup is ideal for any meal.
Ingredients:
- 1 skinless chicken breast, diced
- 1 small zucchini, sliced
- 4 cups low-sodium chicken broth
- 1 small carrot, sliced
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 tbsp fresh parsley, chopped
Salt and pepper to taste
Instructions:
- In a pot, combine chicken, onion, and garlic; sauté for 3-4 minutes.
- Add carrot, zucchini, broth, salt, and pepper.
- Simmer for 15-20 minutes until vegetables are tender and chicken is cooked through.
- Sprinkle with parsley before serving.
