Ingredients:
- cup dried lentils, rinsed
- 4 cups low-sodium vegetable broth
- 1 carrot, diced
- 1 celery stalk, diced
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 cup chopped spinach
- 1 tsp olive oil
- 1/2 tsp cumin
Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil and sauté onion, carrot, celery, and garlic until softened.
